It’s a new year! A new organic vegetable box (that you finally signed up for) now…how to use it?
First of all what’s in your organic vegetable box — otherwise known as the FeedBox?
Lay them all your vegetables out on a table or kitchen bench and have a really good look at those beauties. If there’s something unfamiliar, just ask! The blog is also helpful for easy vegetable based recipes.
Next up, you want to plan your meals
While you don’t need to go through any detailed planning of all your meals, your organic vegetable box however does work best when you can create a little plan (even if it’s just a rough order of when to eat them). Your FeedBox will always have a seasonal mix of things along with some vegetable staples — all dependent on availability and what looks best on the day. Similarly, we want your vegetables to continue looking great right up until you eat them. The way you would load your vegetables into the fridge, is how you eat them in priority. Leafy greens? Yep, you want those packed on top of everything else and eaten first. Potato and pumpkin? Lasting longer, pack these vegetables in to your fridge first.
By eating from an organic vegetable box, you are getting to know your seasons
Importantly, you can expect seasonal produce handpicked in its tasty prime, importantly this is when you will find peak flavour and nutrients. While chain supermarkets have given us the ability to eat out of season, your FeedBox doesn’t work like that.
No waste – nope, not a bit
Ultimately this is what Feedback Organic is all about — a complete no waste system. Eating roots, shoots, leaves and all, everything in your FeedBox can be eaten! What can’t be eaten (that’s your peelings or food scraps) that can be placed in your FoodCycle bin. Which just leaves your box which can be flattened and simply left out for pick up at your on your delivery day.
Roast Beetroot Salad
Roasted beetroot
Mixed salad greens
Diced spring onion
Roasted baby onions
Slivered radishes
Olive oil
Balsamic vinegar
salt to taste
Firstly, on a roasting tray adding your beetroot (you can either peel when they are roasted, or peel the beets when still raw) by roasting you are enhancing their natural sweetness. Meanwhile, peeling five or so small onions, quartering and laying them out on a roasting tray, an additional good drizzle of olive oil and popping the tray into the oven at 180C until vegetables are cooked through. Next, we need to assemble this beauty. It’s all about the textures, colours and taste!
TOP TIP: Add in a little goat cheese or toasted nuts extra crunch and flavour and dress it with a little extra olive oil if needed and a splash of and balsamic vinegar.
Additionally, coming in a whole rainbow of colours — whether you are eating them raw, cooking, pickling or popping them into a morning juice — you can be sure beetroot is certainly full delicious nutrients.
Not sure what to do with those beet leaves? Simply cook them up as you would do with any other leafy green — like silverbeet!
