Eating your leafy — GREENS
While we’ve certainly talked about the benefits of Root to Shoot eating here on the blog, what about your humble leafy greens? Surely they deserve a little highlight of their own? Packed with vitamins, minerals and fibre as a given, did you know leafy greens also have countless health benefits? So what’s number one on the Leafy Green Goodness List? Kale, love it or hate, kale is up there as one of the most nutrient dense vegetables around. Amongst that list also sits, microgreens, silverbeet, swiss chard, cabbage, collard greens and one of deep seated favourites here at Feedback – beetroot leaves.
The beetroot is one of those all round wonder stars, whether it’s the top half or the bottom half, beets has you covered. While a quick and easy recipe for the beet itself can be found here — Beauty of the Beetroot what about those beautiful green and purple leaves? The easiest way to work these beauties is to use them as you would silverbeet. Anywhere silverbeet goes, so to can those beet leaves. With a simple omelette a winner any, day, of the week.
Which leads us to — EGGS
Now all eggs are not created equal that’s a known fact. We have teamed up with Just Been Laid for our Feedboxes for good reason – they are from happy local ladies that lay mighty fine eggs. Did you know that Sarah who runs Just Been Laid (Hunter Valley, NSW) also happens to be David’s (Founder of Feedback) sister? Cool huh!

Shazam Omelette
Take 3 eggs, beating them in a bowl- and a little salt pepper and a dollop of cream if you are feeling reckless and carefree. In a frying pan over medium heat add a couple of slurps of olive oil, add some crushed garlic, a knob of butter and roughly chopped beet leaves, silverbeet, coriander. Cook them up until they wilt just a little, then add your egg mixture over the top and cook until the egg is cooked through. Best eaten with a cheeky sweet chilli sauce and a little love in your heart.
