Roast Eggplant with Pesto
Using a combination of sliced eggplant, tomato and mozzarella cheese, dinner is looking not only tasty but also incredibly easy. Now for the pesto? Have some stashed away from the end of the summer season? Pop that on top! Then into the oven at 200C until roasted, melted and smelling magnificent — tasty, seasonal cooking at it’s finest. Serve with some crusty sourdough, a glass of your finest red, and eat with unbridled enthusiasm.
