Kickin’ it Tofu Salad
Ahh, this salad would have to be a favourite at the moment. Zingy, fresh, super healthy. It really is a kickin’ it salad for the moment and it goes a little something like this.
INGREDIENTS:
carrot
daikon
radish
coriander
ginger
garlic
chilli
apple cider vinegar
peanuts
tofu
INSTRUCTIONS: Grate your carrot, daikon, radish up and finely chop coriander. Grill some tofu and find some roasted peanuts languishing at the back of the cupboard. In an old jar, add some apple cider vinegar, sesame seed oil, grate some fresh ginger, smash a clove or two of fresh garlic, salt to taste and thinly slice a smokin’ hot chilli-add that in too. Shake it up and drizzle over salad.
Don’t have any of these salad ingredients? Add a little vegetable oil, mustard and mayo.
