International Women’s Day
In honour of International Women’s Day, we are beginning our Farmer Spotlight series on one our favourite fab farmers – Lauren!

Favourite vegetable to eat and how? Hmmm, probably sweet potato! Either in a chip form or fried in general.
How did you initially start with Feedback Organic? Matt introduced me to it after he found out about it online. I volunteered for about 6 months I think, before working here!
Favourite time of day? Mid morning.
Favourite season and why? Winter because soups! Also I prefer the cold over summer heat.
Do you have a go to recipe that you use all the time? Yes, probably my mum’s Hungarian inspired style soup. There’s one in particular with potato, peas, onion, kidney beans in a paprika and tomato based broth. Originally it had kransky’s, but I’m vegetarian. {Keen to try your own version of a Vegan Hungarian Goulash?}
How long have you been Vegetarian and what prompted you? About two years? I didn’t want to continue to fund the way many animals are treated in slaughterhouses and factory style farms.
International Women’s Day is a celebration of both the progress that women (regardless of gender or gender identity) have made through equality and also a reminder of how much there is still to change.
