Eggplant Hummus

The eggplants at the moment are looking mighty fine at the farm. This recipe is super easy and can be eaten with, well, pretty much everything.

INGREDIENTS: 

Eggplant, grilled or roasted until soft

1 x can chickpeas, drained

1 x fat clove of garlic

Spoonful of tahini

Juice of half a lemon

A shake of cumin and coriander

Salt to taste

Enough olive oil to create a smooth consistency

INSTRUCTIONS: 

Whack it all in a hand blender, whizz and serve with crunchy vegetables! Or you could mix it up a little. Try adding some toasted sesame seeds, pepitas and sunflowers for
added texture. Or serve your hummus with rice, falafels and a lovely little fattoush salad.
